Ingredients
- 1 cup rice (uncooked, long-grain, white rice)
- 1 teaspoon butter
- 2 cloves garlic (minced)
- 1 teaspoon lime juice (freshly squeezed )
- 15 ounces chicken broth
- salt ((to taste))
- 1 tablespoon lime juice (freshly squeezed )
- 2 teaspoons sugar
- 3 tablespoons cilantro (fresh chopped )
Instructions
In a medium saucepan combine rice, butter, garlic, 1 teaspoon lime, chicken broth, and salt. Bring to a boil then reduce heat to a simmer. Cover and cook on low 15-18 minutes, until rice is tender. Remove from heat and keep covered another 5-7 minutes.
In a small bowl combine lime juice, sugar and cilantro.
Pour the mixture over hot, cooked rice a little as you fluff the rice with a fork. Taste as you go, you may not want all the lime mixture. Adjust to taste. Mix until fully combined.
